Gooey Nut Butter Bars!

These will be in the cookbook which is still a work in progress but almost done! Getting excited.


Loving these right now. Here's the recipe, try them out for yourself. You can sub any nut butter for the peanut butter if peanut butter bothers you.


Ingredients:

1 cup nut butter (no added ingredients) * I used peanut butter

3/4 cup maple syrup

2 Tablespoons cocoa butter

1 egg

1/2 cup almond flour

1 teaspoon coconut flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees. Line a baking pan with parchment paper.


Begin by melting your cocoa butter in a small saucepan. Add the maple syrup and peanut butter and heat over low-medium heat and stir to completely combine.


In a medium bowl, add all of your dry ingredients and stir.


Mix your dry and wet ingredients together.


Beat your egg and vanilla extract together then add them to your batter and combine thoroughly.


Pour your batter into your baking dish and bake for 20-25 minutes.


Remove from the oven and let cool for 20 minutes. Use a knife around the edges of your peanut butter bars then remove them from the pan by pulling up on the edges of the parchment paper. Remove the paper from the bars and allow to cool for another 30 minutes.


Bet you can't just eat one!
