Olive Oil Cinnamon Apple Bread

So, I am stuck on sweet treats right now. This bread is full of chopped apples, cinnamon and sweetened with maple. It's moist and delicious!

Made with coconut flour, the texture is perfect. Once again this is a one bowl, easy to make treat.


Olive oil cinnamon apple bread:

3/4 cup sifted coconut flour 1 tsp baking soda 1/4 tsp sea salt 2 tablespoons Ceylon cinnamon 1/4 tsp allspice 1/4 tsp ground cloves 6 eggs 3 medium to large apples, peeled and diced 1/2 cup pure maple syrup 2 tsp pure vanilla 1/4 cup olive oil


Preheat oven to 350 degrees. Line loaf pan with parchment paper.


Peel and dice apples. In the same mixing bowl as the apples combine all other ingredients and thoroughly mix. Pour into parchment lined loaf pan. Bake 45-55 minutes. Bread is done when you can insert a knife and it comes out clean.


Honestly, this bread doesn't need a single thing spread on it to make it delicious but it is super good to spread a little butter on top of a slice while it is still warm. It would be amazing with a dairy free ice cream as well.
