What's for breakfast??

Beans, salted fish, thinly sliced beef, soups, eggs, rice or even just fruits and veggies are all examples of what some other countries feature for a traditional breakfast. Many of them always include a variety of veggies to start the day.


One of the questions I often get is “what can I eat for breakfast?”


Breakfast in the U.S. has become synonymous with low fiber, high sugar and carb heavy foods such as biscuits, toast, cereal, pancakes, and waffles. Growing up with a set idea of what we should have for breakfast makes it difficult to imagine starting the day off any other way. It is a rare thing to find a variety of fruits and veggies on an American breakfast plate.


So, how can you make breakfast healthy and satisfying?


Here are a few of my favorites:

1. Avocado eggs with fresh micro greens like broccoli sprouts, cucumber, and fresh fruit. You can add tomatoes or any other veggie you like.

2. A breakfast bowl with grain free granola, bananas, cashew or almond butter and dairy free yogurt that is low in sugar.

3. Fried egg with salad and avocado.

4. Almond (or coconut flour) pancakes with lots of fruit! I use real maple or even honey with butter on my pancakes.


Most of the time, I don’t even reach for any of the breakfasts listed above and instead, I will have a big plate of roasted or sautéed veggies and small portion of protein like fresh tuna, chicken, or elk.


Think outside the American breakfast box and get creative when it comes to breakfast!!
